Greener Environment We are located in a beautiful rural area, in the Bois-Francs region, (Center of the province of Quebec). Our property covers almost 800 acres of land, 100 of which produce different kind of crops. All our property has been protected from chemical products (chemical fertilizers, pesticides, herbicides, etc) for more than 25 years now. Moreover, 20 years ago, we chose to have all our inside and outside premises, non-smoking areas so that we may preserve the quality of our air. We chose organic ingredients because organic farming is a form of agriculture which avoids the use of synthetic fertilizers and pesticides, and chemical additives. As far as possible, organic farmers rely on crop rotations, crop residues, animal manures and mechanical cultivation to maintain soil productivity, tilth and compost to supply plant nutrients, and to control weeds, insects and other pests. For us, nature is alive and we need to find out the way to work with nature without taking out food while poisoning the soil and water supply. Our Bread Our baker makes homemade bread with great care. Leavened bread has been developed with 3 year-old spelt flour. Leaven is like wine, the more it ages, the more it tastes. We usually use flour coming from Moulin Lapierre, a local flour mill working with stone mill. Our spelt bread may take 6 hours just to have the leaven processed. (Compare with traditional bread which takes 30 minutes to produce from the start to the end; intolerance to wheat might well come from this fact.) Vegetables Vegetables are grown in our greenhouses or garden, otherwise they are bought from local farmers as far as possible. Why vegetarian food? It seems to us that part of the solution to some countries starvation and global warming resides in a vegetarian diet. One hectare of land feeds 4 oxen at the most, for about 200kg of meat per hectare per year. On the same hectare, in one year, we could produce 5 tons of milk or 3500kg of wheat. So, we could feed many more people with the same land. *Réf : Le Bonheur du végétarisme (p. 24.) Dishes Our food is served in composting plates, with composting forks, spoons and knives in order to reduce our ecological imprint, and take care of our planet
